Summer Cooking: Trout Amandine


Easy, tasty, healthy.






4 steps:
1. Grill trout in olive oil. 2 minutes each side. Set aside.
2. Melt a tablespoon (or two) of butter in same pan. Wait until it bubbles.
3. Throw in some sliced almonds (a handful or two).
4. Remove them once they brown.

Optional: add more butter to melt.
To serve: Put almonds on trout. Drizzle with extra butter (opt.)
Delicious with green beans, carrots or/and roasted potatoes.

Simon is not a big fish eater, but he will eat this meal. The butter and almonds are the selling points for him.

  2. isn't it the best? I was so happy when we discovered that. Also, to add a little zing at the end, you can squirt a wedge of lemon over the whole thing. YUM!!

    Did we tell you about the sage/brown butter sauce over whitefish (any whitefish, we like basa or haddock) recipe? Let me know. That's another super simple and really yummy fish recipe that we fish-hesitant Parhams will eat happily :)

  3. I'll try it with lemon next time. That's up my alley. Yes, we tried the sage fish recipe, but Simon prefers this one.
